Ibiza's best-known boutique winery, founded in 2007 by Laurent Frésard as Totem Wines and now the island's largest wine producer and exporter. Ibizkus works nearly half of Ibiza's registered vineyards, built around the native Monastrell grape, with sustainable minimal-intervention Totem bottlings from single parcels and ungrafted vines. The tasting room on the Ibiza Town to Santa Eulària road is open year-round, with tastings from EUR 25.
